The freshness of coffee beans decreases rapidly after opening. Seasonal humidity is more likely to cause coffee beans to become moldy and spoilage. I used to use vacuumed jars to store beans, but I found that I had to vacuum them every time I brewed coffee. This forced the coffee beans to be vented, although the mold was solved.
